Bucuti & Tara Beach Resort in Aruba invites guests to kickstart their week with an indulgent new Sunday Brunch experience curated by its award-winning culinary team, now under the leadership of Director of Food & Beverage Nicolas Nemalceff.

The latest addition is a revamped Sunday Brunch concept served in the elegant, fully air-conditioned Tara Lounge and presented by Elements, featuring new, rotating options for vegan dining. The resort’s commitment to plant-based cuisine is underscored by its recent achievement of the Vegan Hospitality & Tourism Certification, ensuring transparency and dedication to meeting vegan preferences.
Set in an adults-only ambiance of tranquility and luxury, diners can savor a variety of new offerings each week, including comprehensive vegan selections. Guests can elevate their brunch experience with homemade flavored Champagne foam and celebrate with a bottle of Veuve Ambal Crémant de Bourgogne paired with unlimited orange juice for mimosas. The meal begins with a shared starter of artisan cold cuts, cheeses, smoked salmon, mackerel, and shrimp cocktail. Vegan starters feature local baked treats with butter, preserves, Pica di Papaya dipping sauce, along with roasted carrot and chickpea hummus served with warm pita bread and crudites, and a platter of vegan cheese and veggie sausages.
The rotating brunch menu may include unique twists on favorites like prosciutto eggs Benedict with spicy Hollandaise and crispy potatoes, or a vegan option of eggplant mechada arepas. Guests can also indulge in Chef’s Choice highlights such as Mexican French Toast topped with mango chutney, or a vegan bruschetta di Aruba. Main course selections vary and may include grilled tenderloin, honey-kissed garlic pork chop, escovitch red snapper, or vegan options like heart of palm salad, madras-style curry tofu, and roasted cauliflower.

For dessert, diners can enjoy a refreshing tropical fruit cup with Amaretto zabaione espuma, followed by a dessert tasting platter featuring miniature pastries, local sweets, and Caribbean delicacies. The experience concludes with a surprise weekly petit four course. With thoughtfully portioned servings, guests can fully immerse themselves in a variety of flavors presented throughout the multicourse Sunday Brunch, available weekly from 11:30 a.m. to 3 p.m. The brunch experience is priced at US $120 for two diners, and reservations are strongly recommended, which can be made online or by phone.

Nicolas Nemalceff has recently joined Bucuti & Tara Beach Resort as Director of Food & Beverage, bringing his extensive expertise to enhance the Sunday Brunch experience. Describing himself as a passionate hotelier dedicated to refining and innovating food and beverage programs, Nemalceff has cultivated his skills across the globe.
With a rich background spanning five continents and eight countries, including Ecuador, Australia, Italy, Indonesia, United States, Germany, Costa Rica, and Bolivia, Nemalceff has amassed valuable experience in renowned hotel brands such as Marriott, Ritz-Carlton, Raffles, and Accor. Throughout his career, he has been instrumental in the launch, renovation, and rebranding of numerous restaurants and bars, consistently elevating culinary offerings to meet international standards.

Nicolas Nemalceff brings a wealth of international culinary experience to Bucuti & Tara Beach Resort. His career includes collaborations with Two- and Three-Star Michelin chefs across Asia and Europe, as well as renowned pastry chefs like Adriano Zumbo and Will Goldfarb. He has contributed to top-ranking restaurants in Europe and Asia, showcasing his expertise in culinary arts.
Nemalceff is also recognized for his exceptional skills in front-of-the-house food and beverage service. He has served as a private mixologist for prestigious brands such as Hennessy, and luxury fashion houses like Dior and Louis Vuitton in Asia. His role as a Hennessy Masterclass speaker and finalist in Accor’s regional mixology competition underscores his dedication to delivering extraordinary dining experiences. He has also led successful bar takeovers, further enhancing his reputation in the industry.
A distinguished academic, Nemalceff holds a Bachelor’s degree in Business Administration with a concentration in Hospitality Management from Hawaii Pacific University. Prior to this, he attended the Jakarta Intercultural School in Indonesia. Committed to continuous learning, Nemalceff has achieved the Wine & Spirits Education Trust (WSET) Level 2 with Distinction. He holds certifications in HACCP, ServSafe, Food Safety Management, and First Aid, reflecting his dedication to maintaining the highest standards of safety and service excellence.
